quay.io/packit/packit:latest image does not have an arm64 build

What happened? What is the problem?

Because quay.io/packit/packit:latest image is not dual architecture, running this hook in a container is really problematic as it will either fail or be extremely slow.

WARNING: The requested image's platform (linux/amd64) does not match the detected host platform (linux/arm64/v8) and no specific platform was requested

What did you expect to happen?

Be able to run from arm64 machines (macos) natively.
